Where to buy stroopwafels in Amsterdam

Stroopwafels are sold on every corner of the centre, and the difference between a good one and a bad one is larger than most visitors expect.

Fresh, packaged, or neither

There are three kinds on sale in this city. Fresh off the iron at a market stall, still warm, which is the best thing to eat on the spot but travels badly. Properly packaged from a shop, which is what you want in a suitcase. And the souvenir tin that has been in a window in the sun for a season, which is what you want to avoid.

How to judge one

A good stroopwafel bends slightly rather than shattering, and the syrup is a distinct layer you can see at the edge, not a thin brown stain. It should smell of caramel and cinnamon through the wrapper. If the waffle is pale and dry at the rim it has been sitting.

The Dutch way to eat one

Rest it on the rim of a hot cup of coffee or tea for a minute. The steam softens the syrup and warms the waffle. Then eat it before it slides off, which is the part nobody warns you about.

The one you cannot order online

The stroopwafel most people photograph here is not in the web shop, because it does not
survive the post. It is a giant stroopwafel, half dipped in the same milk chocolate that
goes into the bars, and then finished at the counter with a topping you choose from five
jars: smarties, Biscoff speculoos, caramel fudge, Oreo crumbs or marshmallow. Plain is
also an answer, and a good one.

It is wrapped in red checked paper with a gold seal and handed straight over the counter.
That is deliberate: it is best within a few minutes and a few steps, which is why you will
see people eating them on the Heiligeweg rather than carrying them home.
